Millet and veggie stir-fry recipe

Millets are very versatile grains. Today's generation has forgotten millets but now due to increasing allergies to gluten and various health problems associated with wheat, millets are making a comeback.

Types of millets
Here's a recipe for a healthy millet and vegetable stir-fry -

Ingredients:

  • 1 cup of proso millet
  • 1 green chilli
  • 2 garlic cloves minced
  • 1 tsp of grated ginger
  • 1 tsp of turmeric powder
  • 1 chopped onion
  • 1 cup of mixed vegetables (carrots, french beans, green, yellow & red bell paper)
  • Salt to taste
  • 2 tbsp of oil
  • Red chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
Recipe:
  1. Wash the millets thoroughly and soak them for 10 mins. Start cutting and prepping the vegetables till then.
  2. In a pan, heat some oil and saute garlic, green chilli and ginger. 
  3. Add all the vegetables and sprinkle all spices. Mix thoroughly and cook for 2 mins.
  4. Drain the millets and add the soaked millets to the vegetables. Add 2 cups of water to the stir-fry mixture and bring up to a boil.
  5. Turn the heat down to a low and let it cook until all the water is absorbed.
  6. Garnish with fresh coriander leaves and serve it to your family.
