Here's a recipe for a healthy millet and vegetable stir-fry -

Ingredients:
- 1 cup of proso millet
- 1 green chilli
- 2 garlic cloves minced
- 1 tsp of grated ginger
- 1 tsp of turmeric powder
- 1 chopped onion
- 1 cup of mixed vegetables (carrots, french beans, green, yellow & red bell paper)
- Salt to taste
- 2 tbsp of oil
- Red chilli powder
- 1 tsp cumin powder
- 1 tsp coriander powder
Recipe:
- Wash the millets thoroughly and soak them for 10 mins. Start cutting and prepping the vegetables till then.
- In a pan, heat some oil and saute garlic, green chilli and ginger.
- Add all the vegetables and sprinkle all spices. Mix thoroughly and cook for 2 mins.
- Drain the millets and add the soaked millets to the vegetables. Add 2 cups of water to the stir-fry mixture and bring up to a boil.
- Turn the heat down to a low and let it cook until all the water is absorbed.
- Garnish with fresh coriander leaves and serve it to your family.
